Yummy (Veggie!) Bacon Sandwiches

Grilled maple bacon, apple, and cheddar cheese sandwich with arugula side salad.

One of the big things I miss in choosing not to eat things with legs is… bacon! There aren’t a lot of good fake meat bacon options on the market, but I thought I’d give the new Tofurkey Maple Bacon a try in a series of bacon-themed sandwiches. I only took a photo of the final grilled cheese and bacon, but for those who are interested, here are the three days of bacon sandwiches in order:

Day 1: Classic BLT

Maple veggie bacon, sautéed in olive oil, with
sliced roma tomatoes,
arugula,
tzatziki and
black pepper on
toasted olive oil and roasted garlic bread.

Day 2: Bacon and Brie

Maple veggie bacon, sautéed in olive oil, with
sliced brie,
caramelized onion compote, and
arugula on
toasted olive oil and roasted garlic bread.
(This one was the winner of the three. Although they were all delicious!).

Day 3: Maple Bacon and Cheddar

Maple veggie bacon, sautéed in olive oil, then
alternate layers of bacon,
sliced sharp cheddar, and
gala apple slices, on
olive oil and roasted garlic bread, buttered;
grill to perfection (until cheddar melts into apple and bacon).

    Is that a nice little apple salad on the side? Will have to try all 3 versions as they all sound yummy!

      It is! Apple, arugula, and slivered almonds, with an apple cider vinaigrette. I wasn’t satisfied with the dressing so didn’t bother with the salad in my description. I’d suggest in retrospect that apple cider vinegar, olive oil, and mustard don’t agree well.
